Red, White, & Blue Smoothie


Happy 4th of July!

I made super fun chocolate-dipped strawberries for my kids to eat for lunch.  I have been on a bit of a health kick (they come and go) and so I wanted to make something festive, and also healthy.


Enter the red, white, and blue smoothie.  Let's take a closer look.


You will need 12 oz milk, 1 T flax seed, 1 ripe banana, 1 t sweetener of your choice, a dash of cinnamon, 2 handfuls frozen blueberries, and 6-7 frozen strawberries.  Blend until it is the desired consistency and enjoy!

A is for Ant & Healthy Bodies

Bestie and I have been doing a little Mommy Preschool for our kiddos.  She has been gracious enough to send me her lesson plans.  She has so many good ideas.  I can't wait to share them with you!  


She started the lesson by teaching the girls about the letter A - the sound it makes and how it's written.  Each girl was given a flashcard (shown above).

They went on to talk about their bodies and what makes them healthy.  They discussed things like exercise and healthy food.


To solidify both concepts of the letter A and healthy food, the kids traced the letter A on this darling A is for apple tracing page from Confessions of a Homeschooler.  You could color it too!


Continuing with the discussion of healthy food, the kids were given this Blank Food Pyramid Sheet.  They talked briefly about the different food groups.  Bestie had pictures of the food in each group cut out.  The girls glued the right food group in the right area of the pyramid.  Click HERE to get the pyramid that has the actual pictures in each category.

After discussing food, they did some exercises and stretches together.  Too fun!  You can print off your own Exercise Cards for Kids.

For snack time the kids had ants on a log.  Here are two really cute ways to do ants on a log:

After snack time the kids worked on numbers and counting.  Bestie cut all of those cute little shapes out with her Cricut machine.  She used a 1-10 Sticker Counting Sheet from Confessions of a Homeschooler for them to glue the shapes on.  


For their final activity they made these ADORABLE ants. 
Here's what you'll need:
  1. 6 black circles
  2. 4 black pipe cleaner sticks
  3. 2 jiggly eyes
  4. A hole punch
  5. Glue
First you make the antennae by folding a piece of pipe cleaner in half bending the little tips.  Glue the circles together making sure to glue the antennae in between the two head circles.  Using a hole punch, make a hole on the bottom of each circle for the legs.  Push the pipe cleaner through the holes and fold in half to make the legs.  Glue on the eyes and you're done!  


For homework the girls were given the assignment above.  Goofy loved trying on the different exercises.  Jumping jacks were her favorite.  


They were also assigned to draw pictures of healthy food they ate for dinner on this cute little Place Setting Printable.

Is Gluten-Free the Way to Be?


My sister started a health challenge a few weeks ago and invited me to join.  You find a partner so you have someone to cheer you on and keep you going.  It's a good thing too.  If my practically-perfect mom wasn't my partner I probably would have given up by now.

In this challenge I am not allowed to have white wheat.  Yikes!  I don't know how all of you gluten-free people do it.  But, I have learned that 1) it can be done and 2) there are lots of tasty gluten-free recipes.

This single-serve wheat applesauce muffin is one of them.

Seriously.


I found the recipe from Spark Recipes, adapted it to what I had on hand, and whipped up five of them for my family to try.  (My poor family gets to be my recipe guinea pigs.)  Hubby said the texture was more like sponge cake than a muffin.  I'm still wondering why that is a problem.  Who doesn't love sponge cake?


The kids raved about them and asked if we could have them again tomorrow.


Princess kept saying, "I LOVE this!"


I turned my back to Bud for one minute and his was gone.  He sits next to me and whined all through dinner unless I shared mine with him.


Overall, this recipe was a success.  I will have no hesitation making one of these muffins for myself for a delicious, healthy breakfast.

Single-Serve Wheat Applesauce Muffin
(Adapted from Spark Recipes)
2 t old fashioned oats
3 t flax
4 t milk
3 t wheat flour
2 t brown sugar
2 t unsweetened applesauce
2 egg whites
1/4 t baking powder
1/4 t cinnamon
1 t Splenda

Mix all ingredients together in a microwave-safe mug sprayed with nonstick cooking spray.  Microwave for 1 1/2 minutes.  Allow to cool slightly and enjoy!

Bathtub Tip

Hey everyone!  Sorry I have been MIA.  Between Halloween and sickness spreading from one person to another in our house, I haven't had time to write.

Poor Goofy has had the stomach flu.  The first time she ever threw up she didn't understand what was happening to her.  She wandered up and down the hallway making her sick mess all over.  The only good thing that came from this experience is that the carpet was shampooed.

Because sickness has been a large part of my past few weeks, I thought I'd share a little tip that my mom taught me.


*Tip: Set up a bed for your child in the bathtub.  This way they will be close to the toilet.  If they miss, it doesn't get all over the house.  You don't have to wash all of their bedding.  Finally, if they throw up on themselves they are already in the tub and easy to get ready for a bath.

I loved sleeping in my own "special sick bed" when I was a kid and now my kids do too.  Thanks mom!

2 X 4 Running Challenge


October means so many things to me - monsters, candy, pumpkins, happy children...

But as the years go by there is something else that has become more important to me than (dare I say it) Halloween.  October is breast cancer awareness month.  


This is my mom.  Isn't she beautiful?!  She is one of the most amazing people I know.  I often say, "If I become half the woman that my mom is, I will make it to heaven."  And anyone who knows her would agree with me.  

I remember when she was diagnosed with breast cancer.  It turned our world upside-down.  I hated seeing her sick and in pain.  I am happy to report that she is cancer free.  

Whenever I run in the month of October (at the gym, around the neighborhood, a 5k, anything) I dedicate it to her.  Last year I ran My First 5k in her honor.  

This year I am not participating in a 5k.  Instead, I am going to do a running routine that will help me be consistent the entire month.  I am really good about running the first two weeks of the month, and then...I putter out.  

Not this time.

I call my new running schedule the 2 X 4 Running Challenge.  It's very simple:

Run 2 miles a day, 4 days a week.  


That's it.  Easy huh?  

I invite each of you to join me this October in the 2 X 4 Challenge.  Dedicate your running to someone you love who has had cancer.  Let me know how it goes.  I'd love to hear from you!

And remember ladies - Get your mammograms!  Do your self evaluations!  See your doctor!  Be vigilant!

Healthy Peanut Butter Bites


I am a sweet tooth--I mean a major sweet tooth.  When I'm "dieting" eating fruit to curb my sugar cravings doesn't always cut it.

As I browsed through recipes I had pinned on Pinterest, I found these little gems from Gimme Some Oven and knew I just had to try them.


Healthy Peanut Butter Bites
(Adapted from Gimme Some Oven)
Yield: 20-25, 1" balls

1 c old fashioned oats
2/3 c coconut flakes
1/2 c peanut butter
1/2 c wheat germ
1/2 c assorted chocolate chips (I used butterscotch, milk chocolate, and white chocolate.  These combined to equal 1/2 c)
1/3 c honey
1 t vanilla extract

Mix all ingredients together in a medium bowl.  Let chill in the refrigerator for an hour.  Roll into 1" balls.  Store in an airtight container.  Keep refrigerated for up to 1 week.


They were absolutely delicious!  My kids loved them.  All week they asked to have one of "mom's cookies."  The little kick of butterscotch was my favorite part.

Healthy Cookie Dough


I have seen a recipe floating around Pinterest for Healthy Cookie Dough by Chocolate-Covered Katie.  Whenever I saw it I was skeptical.  After I clicked on it and saw the ingredients that went into it I was even more skeptical.  "There's no way it would taste like cookie dough!" I thought.

I had to try it!


Nighttime is when I splurge.  After a long, tiring day with kids I like to sit down, watch a movie, and snack.  Not on good stuff either.  I love chocolate covered raisins, marshmallows, and suckers.  But, I whipped up a batch of this "cookie dough," grabbed a graham cracker and tried it out...

Holy cow!  This stuff is amazing!  It tasted just like cookie dough.  I couldn't believe it!  I felt more guilt eating the crackers than the dip.

My husband came downstairs and asked what I was making.  I told him I was making healthy cookie dough.  He said, "Then it probably tastes like cardboard."  I made him grab a cracker and taste it.

After one bite he said, "This is not healthy."

"Yeah, it is!" I exclaimed.  I told him all of the ingredients that went into it and he was shocked.

In case you were wondering by now, the main ingredient is chickpeas!


Hubby gives this recipe a thumbs up (which is a lot coming from him).


My kids devoured it the next day.  I didn't tell them it was healthy (aren't I sneaky?).

Healthy Cookie Dough
1 can chickpeas, drain well
1/8 plus 1/16 t salt
Tiny bit over 1/8 t baking soda
2 t vanilla extract
1/4 c peanut butter
Up to 1/4 c milk if needed
1/4 c agave nectar (you can add a little sugar if you think it's necessary)
1/3 c semi-sweet chocolate chips
2-3 t oats

Add all ingredients (except chocolate chips) to a food processor.  (I used a blender and it worked just fine.)  Then, mix in the chocolate chips.  If made and blended correctly it should have the texture of real cookie dough.  

Enjoy!  You won't be disappointed.
